Nothing works without eggs? Nonsense! To be honest: I never had problems while baking without eggs. Sometimes I simply excluded them or I created a recipe that worked naturally without eggs. But sometimes you get a brilliant recipes that needs one or two eggs and you simply have to replace them. In this situations you should always remember some alternatives for eggs. So if you want to replace one or two eggs, you will always find a matching vegan alternative. If you have to replace 5 or 10 eggs in a recipe, it’s getting quite complicating. Bear that in mind: if you want two replace a lot of eggs, you should find a “real” substitute like silken tofu or aqua faba. And for the rest you can choose one of the alternatives here.
So let’s start with a healthy and natural alternative: bananas. They work much better, when they are lightly brown and soft. Peel and halve your banana and mash with a fork. This works prefectly for cakes or pancakes, like our Chai-Banana-bread.
1 egg = 1/2 banana
If you choose flaxseed you should have a look for the shredded ones, cause they work a bit better. If you only get the normal ones, you can chop them with your knife. Flaxseeds are perfecr for bread and sweets.

Hello egg-replacer! We often use this one. You can find it in organic supermarkets or at Veganz. You can mix it with water and use it for cakes, pasta dough or cookies. We used egg replacer for frittierten our fried capellini or the Schupfnudeln genutzt.
1 egg = 1 tbsp. egg-replacer + 2 tbsp. water
Soy flour is similiar to egg replacer and works similar too. You can get soy flour in a lot of supermarkets too, so it’s a good alternative, if you don’t get the egg-replaver.

Hej, you sweet apple sauce! Also apple sauce works perfectly for replacing an egg! Especially sweet things are always a good base to put some apple sauce in it instead of an egg. The best thing: you don’t have to mix or whisk it. We use apple sauce for our chocolate brownies.

Isa like chia, Julia doesn’t. A lot of people are not sure about chia, so you should really weigh if chia seeds are matching for your recipe. Let your chia seeds soak for at least ten minutes before you use the mixture.
