Fortune Cookies belong not only to asian restaurants, they are also belong to your New Year’s Eve Menu! So to be honest, we were spending a lot of time to make these fortune cookies. Why? Well .. have you ever confused salt and sugar? Cause well, we did. More precisely: it was me. Julia was crying and laughing at the same time. More than 100 g (3.5 oz) of salt is .. well, a bit heavy. So we made our fortune-cookie-dough twice cause in the end the cookies tasted a bit .. weird. We hope you do a better job and get these yummy cookies much faster!

Vegan Fortune Cookies

Ingredients

  • 3 tsp egg replacer
  • 60 ml (0.25 cup) warm water
  • 1 tsp vanilla extract
  • 3 tbsp oil
  • 6-8 tsp water
  • 60 g (0.5 cup) flour
  • 1 1/2 tsp cornstarch
  • 1/4 tsp salt
  • 110 g (0.5 cup) granulated sugar

Instructions

  1. Write your fortune messages on small pieces of paper.
  2. Now mix in a small bowl the egg replacer with warm water. In another bowl whisk the cornstarch and the water until combined.
  3. Take a third bowl and mix all the other ingredients: flour, sugar, salt. Add the cornstarch mixture, the egg replacer, oil and vanilla extract to the big bowl and whisk again until smooth.
  4. Preheat oven to 180°C/350°F. Take baking paper and brush lightly with oil.
  5. Place your baking paper on a baking sheet and add 1 tbsp of the dough. Form with the spoon until round. Only make two circles on one baking sheet. Bake for 5-8 minutes.
  6. Do the following with all your fortune cookies: Remove from oven and place the cookies upside down. Work quickly! Place one piece of paper on the cookie, close to the middle and fold the cookie.
  7. Place the folded edge across the rim of a cup or bowl and pull the pointed edges down.
  8. Place your folded cookies into the cups of a muffin tin, so they can hold their shape.
