R69 vegan dark & white mousse with berry glaze

Love to this mousse recipe! One of our favorite desserts is definitely dark and white chocolate mousse. We really love the smooth, creamy texture, with chocolate bits, fruits or mint. Nom! And it is super duper easy to get a vegan version of it! So you only need three, some of you only two, ingredients to make this mousse at home. If you want it more sweet, you can add some avage syrup, otherwise you will be happy with silken tofu and dark chocolate. And that’s it! It’s so easy we also made a fruit glaze on top.

Vegan Dark & White Chocolate Mousse with Fruit Glaze

10 small glasses 30 minutes (+ time to chill)

Ingredients

DARK MOUSSE

  • 400 g (14.1 oz) silken tofu
  • 200 g (7 oz) dark chocolate
  • 2 tbsp agave syrup

WHITE MOUSSE

  • 400 g (14.1 oz) silken tofu
  • 200 g (7 oz) vegan, white chocolate
  • 2 vanilla beans
  • 2 tbsp agave syrup

FRUIT GLAZE

  • 300 g (10.5 oz) frozen berries
  • 1 tsp Agar Agar

OPTIONAL

  • fresh berries
  • mint leaves

Instructions

DARK MOUSSE

  1. Melt dark chocolate in a water bath.
  2. In a high container puree silken tofu, melted chocolate and add agave syrup (if needed).
  3. Pour chocolate mousse in dessert bowls or small glasses and fill up to one third.

WHITE MOUSSE

  1. Melt vegan white chocolate in a water bath.
  2. In a high container puree white chocolate, silken tofu and add agave syrup if needed.
  3. Slice the vanilla pod and scrape out the seeds. Puree again.
  4. Fill your dessert bowls or jars again with one third and chill in the fridge afterwards.

FRUIT GLAZE

  1. Defrost your frozen berries and let simmer in a pot for 2-3 minutes.
  2. Add Agar Agar and let boil for 3 more minutes. Remove from heat.
  3. Strain through a sieve.
  4. Add your fruit glaze on top of your mousses and let chill for another time.
  5. When fruit glaze turns to a firm texture you can top your dessert with mint leaves and fresh berries.
