The only cake that’s allowed to call itself ‘bread’. Banana bread is underrated – very much! Maybe it’s the term itself that’s scaring some people who are afraid to bake a ‘bread’. But of course it is actual cake! I baked this very recipe for my family who were quite sceptical first but thrilled afterwards! “It’s so tasty – just like a cake!” Well, … Yes.

This banana break aka cake is sweet and gets an exiting texture thanks to chunky walnuts and almonds and soft dough around. It’s the perfect cake for anyone who’s not into the sweetest dessert right now. And since it’s cold right and we’re heading towards christmas slowly, we are combining our banana bread with chai today.

Vegan Chai Banana Bread

Ingredients

FOR THE DOUGH

  • 300 g (2.5 cup) flour
  • 200 g (1 cup) brown sugar
  • 2 tbsp aking powder
  • 1 tbsp vanilla sugar
  • 1 tsp natron
  • 1 tsp cinnamon
  • 0.5 tsp nutmeg
  • 1 pinch of salt
  • 100 ml (0.5 cup) oil
  • 1 tbsp cider vinegar
  • 3 ripe bananas
  • 100 ml (0.5 cup) soy milk
  • 50 g (2 oz) walnuts
  • 50 g (2 oz) almonds
  • 20 g (0.7 oz) yogi tea or chai
  • 150 ml (0.66 cup) water

ALSO

  • powdered sugar
  • 1-2 bananas, cut in slices

Instructions

  1. Let's start with the tea so it can infuse for several minutes. Therefor we're preparing a highly concentrated tea, only using 150ml of water with about 20g of your favorite chai. Let it stand aside covered for 8-10 minutes.
  2. In the meantime, prepare the dough. Start by mixing all dry basic ingredients: flour, sugar, baking powder, vanilla sugar, natron, salt, cinnamon and nutmeg.
  3. Peel and mash bananas carefully with a fork. In a bowl, stir with oil, cider vinegar and tea until it's well combined. This will be of muddy-like consistence, which is fine! Because now you can add soy milk until your dough is nice, creamy and viscous.
  4. Oil and flour a cake tin, and fill in dough. Bake at 340°F for about 50 minutes. Use a wooden skewer - if now dough is sticking on it anymore, your banana bread is ready.
  5. Let your cake cool down a bit until getting it out or the cake tin. Serve with powdered sugar and banana slices. For anyone wanting it sweeter, simply serve it with ice cream or whipping cream!
